Let me preface this by saying that these are not going to be your typical large and fluffy pancakes, but they are a different kind of delicious! I would describe the texture of these pancakes as a mix between crepes and bread pudding, both of which are amazing. Anytime i've posted a photo of these pancakes or described them to anyone, they don't believe that you can get anything remotely close to pancake form out of just eggs and bananas. I adore the taste of eggs and bananas, so I love the simple flavor of these (with some syrup mixed in there :)) but you can feel free to add anything to the batter to give them a taste or texture boost. I have listed some options below in the case that you're looking for more flavor!
1 - 1 1/2 bananas
2 large eggs
Optional additions:
Protein powder
Topped with a scoop of almond butter or peanut butter
Handful of chocolate chips
Vanilla extract
Cocoa powder
Honey
Pinch of cinnamon
Pinch of flour
Pinch of baking powder
- Mush banana(s) (I always use a fork) until there are barely any chunks left.
- Add eggs and any additional ingredients and mix until fully incorporated.
- Heat a pan over medium-low heat and lightly butter or oil pan.
- Drop small amounts of batter onto pan (the smaller they are, the easier they are to flip and less likely to fall apart).
- Let cook until bottom edges look golden brown and then very gently flip to cook other side.
- Once other side is cooked, remove from heat and serve with syrup or any preferred toppings!
